Our client, a Luxury Boutique Hotel Group, is looking for a Head Chef for their new Lodge in Masai Mara. The successful candidate will be responsible for organizing and coordinating all food and beverage related operations, procedures, procurement and service. She/he MUST have at least 2 years experience working as a Head Chef in a 5 star Lodge or Tented Camp, be a strong leader and very customer oriented. International Experience is a plus.
Key Responsibilities;
• Implementing, maintaining and training all kitchen staff on all kitchen procedures and standards.
• A 7 day menu, styling and service set according to food signature guide and approved by the design team.
• Good and regular communication between you and the specialist chef trainer in the kitchen and team management.
• Innovative bush dining experience, according to food signature guide.
• Vehicles and containers transporting food to the camps to be spotless.
• Excellent stock controls, rotation and administration.
• Responsible for all food orders, storerooms and fridge and deep freezes.
• Support the lodge manager and assistant lodge manager with all HR related duties relating to the department.
• Develop, up skill and train, live, motivate and inspire the reception team to aspire to the company’s beliefs and standards.
• Co-ordinate and manage the team’s requirements relating to the working roster, leave, staff, visitors, staff welfare and payroll duties.
Qualifications;
• A formal or tertiary food qualification.
• Minimum of two year’s previous executive / head Chef experience required.
• Over 2 years of management experience in a 5 Star lodge or tented camp.
• Customer focused with a warm, friendly personality.
• Excellent Communication and leadership skills.
• Proactive, energetic and “out of the box” thinker.
• Excellent problem solving and interpersonal skills.
• World class hospitality, food and beverage service standards.
• Be abreast of current environmental and political issues.
• First aid training (beneficial).
Monthly gross salary: Ksh. 125,000 - 150,000/=plus other benefits (Approx. 1,250 - 1,500 USD) depending on experience
