Catering / Food Service Manager (Jobs in Kenya, November 2014)

Title: Catering / Food Service Manager - Turkana, Kenya


Daily salary:  USD 250 – 6 weeks to 2 weeks rotation and not paid during off days.
Deadline: 5th November 2014

Our client, a Logistic Facility Management company for an Oil company, is looking for a Catering Manager to be in charge of the catering for its 700 staff members in Turkana.  The successful candidate will be a strong leader with exceptional organization and F&B knowledge. He/ She MUST be willing to spend 6 weeks in Turkana with 2 weeks off in between.

Key Responsibilities:

  • Planning menus ( international and local specific – Kenyan, Ethiopian, Somalian, Chadian, Indian).
  • Ensuring staff are fully trained with staff development programs (Catering).
  • Staff motivated to provide the highest of standards.
  • Managing / implementation of stock controls – budgetary / cost of sales.
  • Liaising with suppliers both national and local.
  • Liaising with clients on site food services matters.
  • QA/QC food services – audit and inspections.
  • Running and managing food services operations in line with HACCP, food hygiene and nutritional regulations (Proteins/Starches etc.) – develop/implement existing SOPs.
  • Running catering operations in line with HSE regulations and OGP compliance – develop/improve existing SOPs.
  • Must have a level 3 award in the Principles of Supervising Customer Service in Hospitality, Leisure, Travel and Tourism.
  • Must have level 3 diploma in Food and Beverage Service Supervision.
  • Have ability to work with and mentor indigenous workforce.
  • Balanced and level headed in situations of client demand.
  • Be very cognisant of East African dining customs and culinary needs.
  • Ability to verbally communicate and in written word – succinctly and effectively.
  • Strong management and leadership skills.
  • Communicate to - with respect and develop an ethnic workforce – build professional relationships.
  • HACCP implementation – with Level 3 HACCP qualifications.
  • Catering food safety – with relevant food safety qualification.
  • Catering apprenticeship – military or commercial.
