Our client a well established Safari Company in Kenya is looking for an experienced Butcher to train other butchers in the Maasai Mara.
Responsibilities:
• Wrap, weigh and label cuts of meat.
• Train other butchers and supervise them.
• Prepare special cuts of meat eg. rib-eye, tri-tip, fillet, t-bone.
• Cut, trim, bone, tie, and grind meats, such as beef, Lamb, poultry, and fish, to prepare meat in cooking form.
• Estimate requirements and order or requisition meat supplies to maintain inventories.
• Receive, inspect, and store meat upon delivery, to ensure meat quality.
• Shape, lace, and tie roasts, using boning knife, skewer, and twine.
• Cure, smoke, tenderize and preserve meat.
